In keeping with the story from the Star Wars prequels, it appears that Star Tours 2 will also be venturing into the past of the Star Wars universe. Since pod racing was a major story point of Episode I: The Phantom Menace, it only makes sense that Star Tours is also traveling back to pod racing heyday. As such, it appears that the vehicles used in Star Tours 2 will be previous versions of the Starspeeder 3000s we are currently used to. Closer inspection of the artwork released today reveals the transports to be Starspeeder 1000s.
